Spicy Radish Pico de Gallo


Spicy Radish Pico de GalloWhat’s your favorite type of ‘pico’? I love something a little different than the standard tomato, onion, cilantro (though you can’t go wrong with the classic). This spicy radish pico de gallo featuring crunchy cucumbers and radishes offers a slightly different flavor that compliments tacos or savory Mexican-style dishes with it’s zesty spiciness. Packed with vitamins, minerals, antioxidants and fiber, this is a very light and healthful snack or appetizer as we look towards spring and summer cooking. 

We’ve got some fun food holidays coming up as we turn the corner out of winter and into spring. Some of my favorite recipes have to do with Cinco de Mayo where fresh spring and summer produce takes center stage. I also love that recent research has come out liking eating spicy peppers to living a longer life. If that’s the case, I’ll likely live a very, very long time.

Instructions
  1. Whisk olive oil, lime juice and zest, salt, cumin and pepper in a small bowl. In a medium bowl, combine remaining ingredients then pour dressing over the vegetables and toss to coat. Cover and chill for 30 minutes to allow flavors to mingle.
