Cranberry Almond Chia Granola

  • 3 cups whole rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup slivered raw almonds
  • 2 Tablespoons chia seeds
  • 1/4 teaspoon sea salt
  • 1/2 cup honey
  • 1/3 cup olive oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup dried cranberries (try to get a variety sweetened with apple juice)


  • Preheat oven to 325 degrees. In a large mixing bowl, combine all dry ingredients through salt. In a separate small bowl, whisk honey, olive oil and vanilla. Pour wet mixture over dry and stir well to combine. Mix in dried cranberries then spread mixture on a large parchment lined baking sheet. Bake in oven for 30 minutes, stirring occasionally to ensure the granola cooks evenly (watch the corners because they tend to get brown)
