St. Patrick’s Day Green Smoothie


I’ve always loved St. Patrick’s Day since I was a kid and if you didn’t wear green at school you were at serious risk of getting pinched. It’s my Dad’s birthday so maybe that’s why I enjoy the holiday as well. We always have special cakes and celebrations for him. We have even done a few spring ski trips in honor of his birthday and his love for skiing. I remember a very specific St. Patrick’s Day in Venice, Italy when we landed on the way to the alps. I’ll tell you that the Italians don’t have much action on March 17th.

I also have some great memories from being in Chicago where St. Patrick’s Day is taken very seriously; they dye the river green and have massive parties around the city. If you’re lucky enough to nab a seat on a party trolley instead of being stuck in a wild Irish bar, you’re much better off. But all of that’s neither here nor there…I have a St. Patrick’s Day Green Smoothie for you!

In an effort to pack in more greens (read more on why that’s important here) I’ve been experimenting with flavorful smoothie combos and this one is a definite winner. Spinach is a perfect green to use in smoothies because it’s not as bitter as other greens like kale or arugula and it is soft so it blends better than other lettuces. Spinach is certainly a nutrition powerhouse and an excellent source of vitamins A, E, K and B’s including folate and minerals iron, magnesium, manganese, potassium, and calcium. Adding veggies into your diet in an easy way like blending them into smoothies is such a great way to boost your intake effortlessly. 

If you’re new to green smoothies, give this one a try because it’s sweetened with fruit for added antioxidants, vitamins, minerals and fiber. A frozen banana offers the perfect balance to a fistful of spinach and I threw in some fresh mint as well as some green tea matcha powder and even a slice of jalapeno for kick. This St. Patrick’s Day Green Smoothie is green-strong in so many ways and unexpected flavors abound.

Instructions
  1. Combine all ingredients in a large blender and puree until smooth. Add more liquid if needed for consistency. Serve immediately.
