As we head deeper into the “holidays” full of rich food, your palate might be starting to get burnt out. Find yourself sometimes yearning for the calmer, more boring January and February months where you get a little break from the social scene? Perhaps it’s time to lighten up sooner rather than later with everyone’s favorite vegetable. I wanted to share my simple Roasted Broccoli with Rosemary because I make it at least once a week and it’s so easy and delicious.
Some people are confused and think that they don’t like broccoli. I think they may just be making it incorrectly. Just like other veggies, broccoli is not best prepared by boiling in water or by microwaving. It makes it soggy and mushy. Instead, season it lightly per my simple Roasted Broccoli with Rosemary recipe, and pop it in the oven so it gets crispy and even a little charred. Veggies need a bit of salt – that’s just how it is – but they’re nicely balanced with tons of natural potassium. It is a total anti-cancer, heart healthy veggie packed with fiber, vitamins, minerals and antioxidants so definitely make it part of your diet regularly. But prepare it in a way that you truly enjoy.
